Chicken Dare (use Dare In Place Of Marsala)

"A friend of mine's son gave me a bottle to try and I came up with this... The pepper flavoring works great with this dish...Great wine...Thank you for the inspiration!"

2-4 Boneless skinless chicken breast
1/4 Cup Flour
1/2 Tsp Salt
1/4 Tsp Black pepper
1/2 Tsp Oregano
1/2 Tsp Garlic powder
1/4 Tsp Cayenne pepper
2-4 Tbs Butter
2-4 Tbs Olive oil
1/2 Cup Minced onion
1 Tbs Minced garlic
2 Cups Mushrooms white/baby bella sliced
3/4 Cup Dare wine
1/4 Cup Sherry
1-2 Tsp Wondra thickening flour

Coat chicken with flour and seasonings (plastic storage bags work great).

Saute garlic and onions in butter and oil untill clear.

Add chicken, brown one side, then turn over and repeat.

Add mushrooms, wine and sherry. Cover and simmer for 10 minutes.

Add Wondra thickening flour...

 

Salmon

2- 6oz. Salmon filets with skin

1/4 Cup Canola oil

2 Tbsp. Capers

2 Tbsp. Lime zest

Salt & pepper 

2 Cups jalapeño wine

 

Jalapeño Red Wine reduction

2 cups jalapeño wine @ medium heat for 30 min. 

or until reduced to 1 cup. 

Brush both sides of salmon with oil then salt and pepper.

Place in cast iron grill pan on medium high. Cook 5 min.on each side.

Remove salmon to serving plates. Add 1/2 cup of jalapeño wine 

reduction in pan with salmon juices. Immediately pour sauce over fish. 

Sprinkle with capers and lime zest.

   

Oyster Sauce Chicken Wings 

2 Lbs. Chicken wings                              2 Tbsp. Soy sauce 

3 Slices ginger root                                 1 Tbsp. Brown sugar

1 Garlic clove, crushed                             1 Tbsp. 5-spice powder

3 Tbsp. Oyster sauce                                1 Cup Chicken broth

1 Cup Jalapeño wine

Place chicken wings in large frying pan and add ingredients.

Bring to a boil over medium heat. Simmer, covered, until

wings are tender, 20-30 minutes. Remove lid and boil to evaporate

sauce to 1/2 cup. May be served hot or cold.   

   

Bloody Mary

4 oz. Tomato juice

2 oz. Jalapeño wine ( or to taste )

1/4 oz. Lime juice

1/4 tsp. Worcestershire sauce

Celery salt

Ground pepper

Tobacco sauce ( optional or to taste )

Celery stalk

1/2 oz. Vodka ( optional )

 

Jalapeño Martini

4 oz. Jalapeño wine

4 tsp.Olive juice

1/2 oz. Vermouth

1 oz. Gin 

1-2 Olives


Ginger Sauce

Dare Wine makes an excellent ginger sauce: 1/3 cup mayonnaise, 1 TBL SPN confectioners sugar (or more), 1/2  to 1 TBL SPN ground ginger, enough wine to make it creamy like a salad dressing. Tried it with fried chicken and steak so far.
